Sugar Free Yellow Cake

Ingredients:

1 cup butter
1 1/2 cups Splenda
8 egg yolks
3/4 cup milk
1 1/2 teaspoons vanilla extract
2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt

Directions

1.  Preheat oven to 350 degrees F.

2.  Grease and flour 2 - 8 inch round cake pans.

3.  Sift together the baking powder, flour, and salt and set aside.
  
4.  In a large bowl, cream together the butter (I use unsalted butter) and Splenda until light and fluffy.

5.  Beat in the egg yolks adding one at a time and then stir in the vanilla.

6.  Beat in the flour mixture alternating with the milk, beatin just until mixed but not overmixing.

7.  Pour batter into prepared cake pans.
  
8.  Bake in the oven for 25 to 30 minutes, or until top spring back when lightly tapped.

9.  Cool for 15 minutes before turning out onto cooling racks.
