Sugar Free Sugar Cookies

Ingredients:

1 cup Butter
1 cup Splenda
2 Eggs
1 Tsp Vanilla
3 Cups Flour
2 Tsp Baking Powder
1 Tsp Salt

Directions

1. In a large bowl cream together the butter and Splenda with an electric mixer until light and fluffy.

2.  Beat in the eggs and vanilla.

3. In a second bowl mix well the flour, baking powder, and salt. 

5. Stir flour mixture into butter mixture 1 cup at a time. 

6.  Chill dough aprox. 1 hour. 

7. Roll out dough and cut into desired shapes with cookie cutters or a knife. 

8.  Brush with milk.

9.  Bake on a sheet pan or parchment lined sheet in a preheated 350 degree oven for 10 to 15 min depending on the size of the cookie.

10.  Remove sugar cookies to a rack to cool.

Icing

1.  Mix Equal, vanilla, butter flavoring, and milk until smooth.

2.  If still too thick to spread add more milk until icing is smooth.

3.  Spread over cooled cookies to desired taste.

*  A helpful tip when making the icing is to not use Splenda for this.  Splenda tends to make the icing hard and chewy so something like Equal is a much better fit for these sugar free sugar cookies!
